For dinner last night I made the Falafel recipe from Ten Dollar Dinners.
I followed the recipe except that I used liquid egg substitute (Egg Beaters) for the egg and used two cans of garbanzo beans (which equals what is called for). Easy to make in a food processor. I made smaller balls than she did and got about 24, cook them for about a minute less on each side.
They were quite tasty and went over well – even the baby enjoyed his!
