Had a busy day so I cheated and used an Archer Farms (at Target) meal kit as a base adding a number of items to make it a filling dinner.
I cooked up the pasta and the sauce according to the directions. I added in a small jar of drained artichokes, diced up, a tablespoon of drained and rinsed capers, a 12 1/2 ounce can of drained chicken breast, shredded, a tablespoon or two of sour cream and a couple ounces of cream cheese to make the sauce creamy. Topped it with some grated Parmesan cheese and served it with a small loaf of cheese bread.
It went together fast and was tasty – even if not truly homemade.
