This was my Mom’s favorite recipe for Zucchini Bread. She made it many times (I doubt she needed the recipe). On top of the refrigerator was 2 green index card holders and this recipe was always near the front. There wasn’t many years where we didn’t have a Zucchini plant in the yard!
Zucchini Bread
Ingredients:
- 3 eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 2 cups zucchini (grated raw)
- 3 cups all-purpose flour
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
- ¼ tsp baking powder
- 2 tsp pure vanilla extract
Directions:
Preheat oven to 325°.
Beat eggs, add oil, sugar and vanilla.
Add zucchini and dry ingredients.
Pour into two greased loaf pans.
Bake for 60 to 75 minutes.
Makes two loaves.
