I needed a quick dinner to make tonight – our son had an early evening class to go to, so I made a favorite of Ford’s.
Bruschetta Chicken Casserole
Heat your oven to 400*.
1 14 ounce can diced tomatoes (undrained)
1 can green beans (drained)
1/2 cup water
1 10 ounce can chicken breast (drained)
1 tsp dried Thyme
1/2 tsp dried Oregano
1/4 tsp diced dried garlic
1 cup shredded mozzarella cheese
1 6-8 ounce package quick stuffing mix (I recommend Fresh Gourmet)
Take the drained chicken and with a fork break it into small pieces.
In a large bowl mix the tomatoes, green beans, water, herbs and the chicken. Add in 3/4 cup of the cheese. Add in the stuffing mix and mix till just moistened.
Pile into a 8×8″ glass baking pan. Top with the remaining cheese.
Bake at 400* for 25 minutes or until the cheese is all melty.
