This was the side dish to our dinner tonight.The berries I used come from Trader Joe’s – they rehydrate perfectly while the dish bakes. I think this may become our side dish for Thanksgiving dinner!
Maple Orange Berry Sweet Potatoes
2 15.5-ounce cans sweet potatoes
1/2 cup mixed dried berries (blueberries, golden raisins, cranberries)
1/4 cup fresh orange juice
1/4 cup real maple syrup
Heat oven to 350*.
Drain the sweet potatoes. Put in a medium oven proof baking dish. Add in the berries, juice and maple syrup. Combine gently to mix well. Cover tightly with a lid or foil. Bake for 40 to 45 minutes.
