The awesome part about being in my second Trimester is I can eat all my favorite foods again – yay! And we are eating so much oatmeal again 😀 Happy days! I know Kirk was really missing eating oatmeal most mornings so I am happy I can cook again.
Spiced Walnut and Raisin Oatmeal
- 2 cups original almond milk
- 1 cup old-fashioned oats
- 4 ounce tub unsweetened apple sauce
- ½ cup raisins
- 2 Tbsp brown sugar
- 1 tsp ground cinnamon
- ¼ tsp pure vanilla extract
- ¼ cup finely ground walnuts
Add everything but the vanilla and walnuts to a medium saucepan, bring to a boil. Turn down to medium-low and cook for five minutes. Take off the heat, stir in the vanilla and most of the nuts. Serve up the oatmeal, top with the remaining nuts and more brown sugar if desired.
