Anew recipe idea I tried the other morning for Kirk and I. The oats have a nice puffy/light texture. I made it fresh for breakfast and not the night before so I don’t know how it would handle being reheated, but it is a recipe I will keep tinkering on. One change is it wasn’t vegan as we often do – I added egg whites for protein.
And I know you are all jealous of my vintage baking dish! (I wish!):
Baked Banana Bread Oatmeal
Ingredients:
- 1 cup old-fashioned oats
- 3 Tbsp brown sugar
- 1 tsp ground cinnamon
- 1 tsp baking powder
- Pinch of salt
- 1 cup milk
- 2 medium ripe bananas, mashed
- 6 Tbsp egg whites (or about 3 eggs)
- 1 tsp pure vanilla extract
Directions:
Preheat the oven to 350°, spray 1½ quart baking dish with cooking spray.
In a small mixing bowl combine the oats, sugar, cinnamon, baking powder and salt.
In a large mixing bowl whisk the remaining ingredients together, add the dry to the wet, stir well.
Pour into the baking dish, bake for 40 minutes, until puffy and set in the middle.
Serves 2.
