It is tempting to label it “Edamame Hummus” but I know that isn’t accurate, so I will call it a spread and dip. No tahini, no lemon juice and it isn’t even bright green, but it is delicious. And nothing like hummus!
It is delicious in its own right….
Edamame Spread & Dip
- Ingredients:
- 9 ounces edamame, ready to eat (see notes)
- 6 Tbsp extra virgin olive oil + more for drizzling on top
- ¼ cup water
- 2 tsp garlic, minced (4 cloves)
- 1 tsp paprika
- 1 tsp ground cumin
Directions:
Reserve a handful of beans for the topping, add everything to a high-speed blender or food processor, process or pulse till smooth, stopping to scrape as needed. Taste for seasoning, add salt if desired.
Plate with reserved beans and oil drizzled on top.
Serve with crackers, chips or vegetables, or us as a sandwich spread.
Notes:
Find ready to eat edamame in stores such as Trader Joe’s, in the produce department. It is already salted. If you can’t find it, use thawed frozen shelled beans. If not precooked, follow package directions, cook and cool, then proceed. Add salt to taste.
