Peachy Chicken Over Spiced Couscous



1 cup couscous

1/4 tsp ground black pepper

1/4 tsp ground allspice

1 bay leaf


2 16-ounce cans sliced peaches in light syrup or water

1 10 to 13-ounce can chicken, drained

1 cup water

2 tsp low sodium chicken bouillon

1/2 tsp crumbled dried oregano

1/4 tsp ground black pepper

1/4 tsp kosher or sea salt

1/8 tsp ground nutmeg



In a small saucepan bring 2 cups water, allspice and pepper to a boil. Add in the couscous, stir, cover tightly and take off the heat. Let sit for 10 minutes.


In a blender or food chopper add the contents of one of the peach cans. Whirl till blended. Drain the second can of peaches.

In a medium saucepan add both of the peaches along with the other sauce ingredients. Bring to a boil over high, drop the heat to medium low and cook, stirring often for 10 or so minutes.

Fluff up the couscous and serve the sauce over it.

Consider topping the dish with natural grated coconut.

Serves 3.
