These sounded fun to make, so I took the original recipe and tweaked it a bit. Quite tasty and very easy to make. They would make a great appetizer for parties and would travel well if chilled after baking.
Smoked Salmon Mini Quiches
1/2 cup lower fat baking mix
1/2 cup nonfat dairy milk
1/4 cup lower fat sour cream
1/2 tsp Worcestershire sauce
2/3 cup shredded 2% milk Cheddar cheese
1 3-ounce package smoked salmon
1 tsp dry chives
Heat oven to 400ºF. Spray a 24 mini-muffin cup pan with cooking spray.
Beat baking mix, milk, sour cream, Worcestershire sauce and eggs with fork until blended; stir in remaining ingredients. Fill each muffin cup evenly (it may be to the top).
Bake for 15 to 20 minutes or until golden brown. Cool 5 minutes and then remove from pan. Chill any leftovers.
