I made this for breakfast for Kirk and I this morning. I think it is a solid recipe with good texture/flavor but that next time I will add a little more milk, maybe 1/2 to 1 cup more. It could have used more during the cooking. Though the texture is very spot on, no gluey mess or typical paste texture that oatmeal often has.
Date and Peach Oatmeal
Ingredients:
3 cups old-fashioned oats
2-3 cups low-fat milk (see above)
1/2 cup diced dried dates (the type rolled in sugar)
2 Tbsp packed brown sugar
1/4 tsp kosher salt
1 can peach slices, drained
1 Tbsp packed brown sugar
Directions:
In a heavy medium saucepan bring the milk to a boil. Add in the oats, dates, first brown sugar and salt. Drop the heat to low and stir well. Let cook for 5 minutes, stirring often.
Serve with the second brown sugar sprinkled over it and the peaches on top.
Serves 2.
