Pecan Coconut Oatmeal
Ingredients:
- 2 cups original almond milk
- 1 cup old-fashioned oats
- ¼ cup raisins
- 2 Tbsp brown sugar, packed
- 1 tsp ground cinnamon
- ¼ cup pecans, finely chopped
- ¼ cup shredded coconut
Directions:
Add everything but the pecans and coconut to a large saucepan, bring to a boil. Turn down to medium-low and cook for 5 minutes, stirring often.
Take off the heat and stir in the pecans and coconut.
Serves 2.

Yum! That puts those little instant packets of oatmeal to shame! Did you use unsweetened coconut?
I did, but either type of coconut works well 🙂
