Soft and Chewy Oatmeal Honey Raisin Cookies
Ingredients:
- 1 cup old-fashioned rolled oats
- ¾ cup all-purpose flour
- 1½ tsp baking powder
- 1½ tsp ground cinnamon
- Pinch fine sea salt
- 2 Tbsp coconut butter, melted and cooled
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- ½ cup raw honey
- ¼ cup golden raisins
Directions:
In a large mixing bowl, whisk together oats, flour, baking powder, cinnamon, and salt together.
In a smaller mixing bowl, whisk together coconut oil, egg, vanilla, and honey.
Pour over, dry, mix to combine. Add in raisins.
Cover and refrigerate for 30 minutes.
Preheat oven to 325°, line a large baking sheet with parchment paper. Divide dough into 15 portions, flattening each scoop (dough is sticky).
Bake for 12 to 15 minutes, until they look done. Go by smell so you don’t over bake. If any of the cookies have spread, divided when warm with a butter knife.
Let cool, then transfer to a tightly sealed container.
Makes about 15 cookies.
