Mango Peach Salsa

This stuff is addicting. Great for big tortilla chips, but also awesome poured over chicken and/or fish before baking.

Mango Peach Salsa

Ingredients:

1 mango – peeled, seeded and chopped

1 15-ounce can peaches in fruit juice, well drained and chopped

1/4 cup diced fresh red bell pepper

1 green onion, chopped

2 Tbsp diced fresh cilantro

1 fresh jalapeno pepper, seeded and diced

3 Tbsp fresh lime juice

Directions:

In a medium glass bowl mix everything up and gently toss. Cover and let meld for at least 30 minutes before eating. Store tightly sealed in the refrigerator and use up within a day or two.
