Pumpkin Oatmeal

This oatmeal might sound weird but it is really, really good. Think the flavors of pumpkin pie…just healthier!

Pumpkin Oatmeal

Ingredients:

3 cups light vanilla soy milk

1 1/2 cups old-fashioned oats

3/4 cup canned pumpkin puree

2 Tbsp honey

1 tsp pumpkin pie spice

1/4 cup raisins

Directions:

In a large saucepan add the soy milk, pumpkin, honey and pie spice, whisk to combine well. Stir in the oats. Bring to a boil, turn to low and cook stirring often for 5 minutes. Take off the heat band add in the raisins.

This chills well and can be reheated for 1 to 2 minutes in the microwave in the morning.

Serves 3, 1 1/4 cups per serving.
