I adapted a Beachbody blog recipe, adding in more vegetables, and a hint of fruit, to this curried chicken. This 21 Day Fix friendly recipe is easy and quick to pull together, be it for a family dinner, or a prepping session for making meals in advance. I also lowered the calorie count by using coconut milk beverage, versus canned coconut milk, giving it the flavor, without the heavier mouth feel. As for the raisins, I prefer the taste of golden, but regular is fine.
Curried Chicken With Couscous
Ingredients:
- 2 cups water
- 2½ cups unsweetened coconut milk beverage, divided
- 1 tsp fine sea salt, divided
- 2 cups couscous
- 2 Tbsp all-purpose flour
- 2 Tbsp mild curry powder
- 1 Tbsp coconut oil
- 1 bunch green onions, trimmed and thinly sliced
- 1¾ raw chicken breast, boneless and skinless, cut into bite-size pieces
- 1 cup carrots, peeled, trimmed and cut into thin matchstick
- 2 small apples, peeled, cored and chopped
- ½ cup golden raisins
- Natural unsweetened coconut
Directions:
To make couscous – Add water, ½ cup of the coconut milk beverage, and ¼ tsp of the salt to a medium saucepan. Bring to a boil over high. Turn off heat, add in couscous, stirring well. Cover and let rest for 10 minutes. Fluff up with a fork.
Meanwhile, in a gallon zip top bag add the remaining ¾ tsp salt, flour, and curry powder. Add the chicken, seal and shake till coated.
Heat a large/deep saute pan over medium heat. Add in coconut oil, green onions, and chicken. Cook for 5 minutes, shaking pan to brown on all sides.
Add in remaining coconut milk beverage, carrots, apples, and raisins, bring to a boil. Reduce heat to medium-low, simmer for about 10 minutes, stirring often.
A serving is ½ cup cooked couscous and ¾ cup curried chicken.
Serves 8.
I prepare curry every now and then and canned coconut milk is something that I usually skip as well. I hate its soapy aftertaste. To keep the flavor I add some desiccated coconut. It gives some interesting texture to the dish as well.
