If you are like me, once summer finally shows up, I love cooking outside. Especially on those evenings when I’ve been to the local farmers market and harvested from our gardens.
Hot days make me crave fresh produce, and lighter fare. These vegan friendly veggie fajitas are quickly grilled up and enjoyed on the deck. With plenty of time for the boys to make s’mores after on the coals!
Simply Organic has brought out a fabulous line this summer of simmer sauces for fajitas and other yummies! The ingredients are safe for my family, and with how busy we are in summer, it saves so much time in prep.
And look at the nutritional stats – it’s not high in sodium, nor full of sugar!
Vegan Veggie Fajitas
- 2 Tbsp virgin olive oil + a bit more for the pan
- 1 red bell pepper
- 1 orange bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 sweet onions (palm sized)
- 1 package Classic Fajita Simmer Sauce
- 12 street taco or fajita size flour tortillas
Get grill ready. For best results, cook in as large a cast iron pan as you have. If your pan is small, do the cooking in two batches, then combine at the end, when you add the sauce.
Core and seed peppers, thinly slice. Peel, halve, and thinly slice the onions. Toss with the oil in a large bowl.
Heat the cast iron pan over the grill until hot, drizzle in a bit of oil and immediately add in the peppers and onions.
Using tongs, keep the peppers moving, until they are tender crisp, and just starting to char a bit.
Pour the fajita simmering sauce over, heat through, stirring.
Take off the grill, and serve hot.
Top tortillas with the peppers and onions, lots of guacamole and even a bit of fresh salsa on top.
Serve with your favorite refried beans and mexi-rice on the side….and maybe some ice-cold rice horchata!
