Salmon Cakes

A good 4 or so years ago I got the basis of this recipe from a forum member – so long ago I don’t remember who shared it. It worked well though and was easily changed to personal taste. This was my version of the final recipe we came up with. They are great with or without a bun and make a nice cold snack out of the fridge a day later as well!

Salmon Cakes

Ingredients:

14.5 ounce can wild Alaska salmon
3 or 4 spring onions (or green onions)
1/2 jalapeno pepper, seeds removed, diced
2 cloves garlic
1 tsp old bay seasoning
1/4 tsp cayenne red pepper
2 egg whites
1/2 cup raw oatmeal

Extra virgin olive oil


Directions:

Dice up the onions, jalapenos and diced garlic, then mix with the salmon, egg whites, cayenne, old bay and oats in  bowl and then make into 6 patties. Stash the patties in your frig for 30 minutes to set.

Preheat a nonstick pan  on medium high heat, drizzle in the oil to taste and pan fry for about 3 minutes per side.
