This is a long time favorite for a quick easy meal. I took a couple recipes off of Knorrr’s website to get this. I have also turned it into a backpacking friendly trail meal as well! – Kirk loves couscous š
Curried Chicken Couscous
Ingredients:
3 cups water
1 package KnorrĀ® Vegetable recipe mix (find in soup aisle)
1/4 cup mixed diced dried fruit
1 tsp mild curry powder
2 Tbsp extra virgin olive oil
1 13-ounce can chicken breast, drained
1 package (10 oz.) plain couscous
Grated Parmesan to taste
Directions:
Bring waters, soup mix, fruit, oil and chickenĀ to a boil in a medium saucepan. Reduce heat and simmer covered for 2 minutes. Stir in couscous then remove from heat and let sit covered for 10 minutes. Fluff up and stir in a couple Tablespoons of Parmesan cheese.
