I had a craving for coffee cake tonight so I did a little of this and that to produce a quick cake that is also not huge…
Streusel Coffee Cake
Cinnamon Coconut Streusel:
1/3 cup Heart Smart Bisquick® mix
1/3 cup packed dark brown sugar
1/4 cup lower fat coconut
1/2 tsp ground cinnamon
2 Tbsp unsalted butter, chilled and diced
2 cups Heart Smart Bisquick® mix
1/4 cup white sugar
2/3 cup lowfat milk
1 large egg
1 tsp pure vanilla extract
Heat your oven to 375. Spray a cake pan with cooking spray and set aside.
In a small bowl mix the dry streusel ingredients together, add in the butter and work quickly into small crumbs with clean fingers. Set aside.
In a medium bowl mix the baking mix and sugar for the coffee cake. Add the egg and vanilla to the milk and stir well, pour into the dry ingredients and quickly stir into a batter. Pour into the prepared pan, smooth out and top with the streusel topping.
Bake for 20 to 30 minutes or until golden brown and done when tested with a toothpick. Time will vary on your oven!
Makes 1 cake.
~I served it with a little vanilla yogurt next to it, for dipping in. It will make a tasty breakfast as well tomorrow!
