Chewy Oatmeal Raisin Cookies

I made up a batch for my brother who was down visiting this past weekend and sent home most of them with him. They are very soft and chewy, with the taste of a granola bar.

No photos – I made them right before we took him back to the ferry so he could head home.

Chewy Oatmeal Raisin Cookies

Ingredients:

1 1/4 cups unsalted butter ( 2 1/2 sticks), softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 tsp pure vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp kosher salt

1/4 tsp freshly ground nutmeg

3 cups old-fashioned oats

1 cup raisins

Directions:

Preheat your oven to 375° and line three baking sheets with parchment paper.

In a stand mixer bowl beat the butter and sugars till smooth. Add the egg and vanilla and beat in.

In a separate bowl whisk the flour, baking soda, cinnamon, nutmeg and salt together. With the mixer on low add the flour mixture in slowly, beating until incorporated. Turn up the mixer and add in the oats and raisins, beat quickly to mix in.

Use a 2 Tbsp size disher to make balls (about 27) and do 9 per tray. Bake for about 13 minutes or until golden brown – but still soft. Let sit on the trays for five minutes to firm up, then cool on racks.

Makes about 27 cookies.
