I made this the other day and besides being tasty was quick to make.
Quick Peach Cobbler
Ingredients:
1 cup baking mix (Bisquick®)
2 Tbsp granulated sugar
1/2 tsp ground cinnamon
1/4 tsp fresh ground nutmeg
1 cup low-fat milk
3 Tbsp vegetable oil
3/4 cup granulated sugar
1 tsp cornstarch
1 tsp lemon juice
1 24-ounce jar peach slices (or 29-ounce can) drained
Directions:
Heat your oven to 375°.
In a medium bowl whisk the baking mix through vegetable oil together, pour into an ungreased 8×8″ baking dish. In a small bowl gently combine the 3/4 cup sugar, cornstarch, l;emon juice and peaches together. Gently spoon over the batter.
Bake for 55 minutes, let rest for 20 minutes before serving.
Store leftovers in the refrigrator tightly covered.
