This was a new idea I tried out. It is definitely better if you bake it and eat it while hot, versus chilling it and then reheating the next morning.
Baked Oatmeal For Two
¼ cup old-fashioned oats, ground to fine
1 cup old-fashioned oats
1 tsp baking powder
½ cup light vanilla soy milk
½ cup unsweetened applesauce
2 tbsp maple sugar (or brown sugar)
1 tsp cinnamon
1/8 tsp ground cardamom
1/8 tsp ground ginger
Preheat oven to 350°. Add all ingredients together in a medium mixing bowl, stirring till fully incorporated. Transfer to an oven safe baking dish (small, under 1 1/2 quart size) and bake for 30 minutes, until a toothpick inserted into the center comes out clean and its a little crusty on top. Let cool a bit and serve.
