Sunny Morning Oatmeal

This oatmeal was amazing. I went to bed last night dreaming about making it. I had picked up a quart of Turtle Mountain’s So Delicious Coconut Nog drink the other night and had a feeling it would taste awesome with oats.

You haven’t heard of Coconut Nog you say? It is a vegan friendly, nut free holiday nog. If you love the taste of the new coconut milks (similar to soy and almond) you will love this nog. It is very rich tasting and comes in at 180 calories per cup, with 6 grams of fat (which while heavy is still a nutritional bargain compared to dairy based nogs!).

Sunny Morning Oatmeal (even if it is gloomy it will make your day bright!)

Ingredients:

  • 2 cups Coconut Nog
  • 1 cup old-fashioned oats
  • 8 ounce can crushed pineapple, well-drained
  • ¼ cup dried cranberries
  • ¼ cup raw pecans, finely ground

Directions:

Add the nog, oats, pineapple and cranberries to a heavy medium saucepan, bring to a boil. Turn to medium-low and let simmer for five minutes, stirring periodically.

Take off the heat and stir in the pecans.

Serves 2.

    1. My 14 year old grew up on soymilk (milk allergy) and went to almond a year ago – and he loved the coconut nog last night. Had I not stopped him, he would have drank the whole quart!
