Almost-Raw Fudge from Allergy Friendly Food for Families

I received a review copy of Allergy-Friendly Food for Families: 120 Gluten-Free, Dairy-Free, Nut-Free, Egg-Free, and Soy-Free Recipes Everyone Will Enjoy and perused it. While we are fortunate to not have any hard-to-avoid allergies (outside of my inability to consume artificial coloring) I have a number of friends who are moms with allergic children. It is nice to be able to learn how to create treats/share recipes they could use! The recipes in the cookbook are laid out by sections:breakfast, desserts, and so on, with each recipe having color coded flags of what they are free of. For example, the Almost-Raw Fudge recipe below is gluten-free, dairy-free and soy-free. So not every recipe is free of all major allergens, you will need to read carefully if it is an issue. But it does give options and new ideas aplenty. The book also has sections discussing how to eat better (such as how to lower processed sugar consumption without being a major Debbie Downer) and how to involve your children with learning to cook – I loved those sections!

This would a great cookbook to give as a gift to parents and caregivers of children with allergies but also for those wanting new experiences!

As for the fudge? Delicious!

Almost-Raw Fudge (adapted from page 137)

Ingredients:

  • 1½ cups nut or seed butter of choice (used almond), natural, no salt or sweetener (called for cashews
  • 6 Tbsp honey or agave nectar (called for agave)
  • ¼ cup virgin coconut oil, solid
  • ½ tsp fine sea salt
  • ¼ tsp pure vanilla extract
  • ½ cup unsweetened cocoa powder

Directions:

Add the butter, honey, coconut oil, salt and vanilla to a food processor bowl, run until smooth. Add in the cocoa powder, run on high until mixed in and smooth. Transfer to a mixing bowl, cover and refrigerate for 20 minutes.

Using a 1 Tablespoon Disher make scoops, set on a plate. Quickly roll each scoop into a ball, compacting as needed. If your hands are warm, wear disposable gloves while rolling.

Store wrapped in the refrigerator, they will firm up considerably as they chill.

Makes about 2 dozen.
