8 ounces spaghetti, broken into thirds
1/4 cup grated Parmesan cheese
2 Tbsp precooked crumbled bacon
fresh ground black pepper
2 Tbsp melted butter
Bring a couple quarts water to boil, add pasta and cook for time on package.
Melt the butter and let cool. meanwhile, in medium glass bowl mix raw eggs with cheese, bacon, 2 Tbsp fresh or 2 tsp dried parsley and add lots of ground black pepper. Whisk in cooled butter.
Drain pasta quickly and immediately pour into egg mixture. Toss fast with 2 forks till sauce starts thickening. The heat will cook the sauce but personally I like to at this point put the bowl in the microwave and cook on high for a minute, tossing halfway through.
Serve with additional grated cheese and parsley.
