Dinner last night was two pot meal that came together fast.
Sun-Dried Tomato Orzo Pasta With Sausage
1 Tbsp extra virgin olive oil
3/4 tsp diced dried garlic
1/2 cup chopped bell peppers (frozen is fine)
3 chicken apple sausages, casing removed and chopped large
1 cup diced sun-dried tomatoes (non-oil kind)
1 1/2 cups water
1 1/2 tsp low sodium vegetable bouillon
2 tsp honey
1 tsp ground cinnamon
1/2 tsp dried oregano
1/4 tsp fresh ground black pepper
8 ounces dry orzo pasta
Bring a pot of water to a boil. Add in the orzo and cook for time on package.
Meanwhile: In a large sauce pan heat the oil over medium high heat. Add in the peppers and garlic and saute till just getting good. Add in the sausage and continue cooking till the sausage is browning. Add in the rest of the ingredients, stirring well. Lower the heat to medium low and let bubble gently till the orzo is done.
Drain the orzo quickly then add into the sauce, stirring to coat. Turn off the heat and plate up. Top with a little shredded Parmesan cheese if desired.
