I made this for dinner tonight, it is a very filling meal due to the garbanzo beans in it. Cheap as well!
Spaghetti with Chickpea Sauce
Ingredients:
1 lb. spaghetti
3 Tbsp extra virgin olive oil
1/4 tsp red pepper flakes
3 garlic cloves, diced
1 15-ounce can garbanzo beans, rinsed and drained
1/2 tsp dried Thyme
1 cup lower sodium chicken or vegetable broth
1 14 1/2-ounce can crushed or diced tomatoes
1 Tbsp Balsamic vinegar
Freshly ground black pepper
1/2 cup Grated Parmesan cheese
Directions:
Bring a large pot of water to a boil and cook the pasta for the time on the package.
In a mini food chopper or food processor pulse the garbanzo beans till finely chopped.
Meanwhile, in a heavy wide pot over medium heat add in the olive oil, red pepper flakes and garlic and let warm through. Add in the beans, thyme and 1/2 tsp freshly ground black pepper.
Add the broth and the tomatoes, bring up to a boil. Turn off the heat and stir in the vinegar.
Taste to see if it needs more pepper and if desired, salt.
Toss the drained pasta with the cheese and then the sauce.
Serves 4.
