Raw Chocolate Mousse

I was inspired by a recipe I saw on Goodveg for a raw cake, and used her raw mousse to make an indulgent pudding.

The longer you run the blender, the more air is worked in as well.

Raw Chocolate Mousse

Ingredients:

  • 1½ cups raw cashews, soaked in filtered water overnight and drained
  • 1¼ cups filtered water
  • 1/3 cup Raw Cacao Powder or unsweetened cocoa powder
  • ¼ cup pure maple syrup
  • 2 tsp pure vanilla extract
  • ¼ cup melted virgin coconut oil

Directions:

Add the drained cashews, filtered water, cacao powder, maple syrup and vanilla to a high-speed blender (such as a Vitamix). Process on low, going up to high slowly, tamping as needed, until smooth. Spoon into serving dishes (custard cups work well), refrigerate until cold and set up.

Serves 4.

Note:

This isn’t an overly sweet pudding. If you are used to more sugary desserts, add more to taste. You can also use agave or honey as well, both of which I find to be sweeter in taste.

  1. I think cashews are the most versatile nut of all. I had someone comment on my blog recently that they were allergic to cashews! The horror! Cara’s stuff is always incredible, but I’m really enjoying just the mousse here!
