Cherry and Lemon Smoothie

Brandi, of The Healthy Flavor, inspired me again. With an ample bag of frozen dark cherries from Costco in the freezer and a lot of leftover lemon juice from my Lemon Coconut Breakfast Bars, I decided a frosty one would go well with breakfast earlier this week…..

Cherry and Lemon Smoothie

Ingredients:

  • 1Β½ cups frozen pitted dark cherries
  • 3 Tbsp fresh lemon juice (about 1 large)
  • 2 Tbsp natural nut or seed butter
  • 3 Medjool dates, pitted
  • 1 Tbsp ground flaxseed
  • Β½ to 1 cup water
  • 1 cup ice cubes

Directions:

Add ingredients to a high-speed blender. Process on high, tamping, until smooth and creamy, adding more water as needed. Serve immediately with a wide straw.

Serves 1 very large or 2 normal servings.

  1. My mouth is watering! I have everything on hand except the cherries! Darn! Well and I don’t exactly have a high speed blender either come to think of it. πŸ™ Wonder how it would turn out if I just blended the heck out of it in my regular blender? Thanks for the recipe, maybe with a couple of modifications I can make it work with my blender. But now I know what I’m asking Santa for next year! πŸ™‚

    1. If you can, pre crush the ice – and you could thaw the cherries a bit as well. Also, stop often and scrape the sides, pushing down. That is how I used to make frappes before I got a Vitamix πŸ™‚

        1. I don’t have a fancy blender either. I use crushed ice and let the cherries sit in the blender for just a few minutes before blending everything together. It works perfectly πŸ™‚

    1. Besides chilly days, it hasn’t felt like winter here so far. No snow at all πŸ™ But as usual it is grey and gloomy most days..lol. So a sunny drink keeps me going!
