The two youngest boys love, love these muffins. They would happily eat them every night for dessert – and never know what is in them. Well, they do know, and that makes them even more desirable. They love pumpkin! The recipe works with most cake mixes, any flavor, however I find that chocolate seems to pair the best.
Chocolate Pumpkin Muffins
Preheat oven to 350° and line a 12 count muffin tin with premium liners.
Mix cake mix, pumpkin pie spice, and pumpkin till smooth. Divide between cups evenly (a 3 tablespoon disher/scoop works well).
Bake for about 23 minutes, or until set on top.
Let cool on a rack. Store covered, or freeze for long-term storage.
Makes 12 muffins.
