Angel Food Cupcakes

I made these last night for a quick dessert. Having a stand mixer is a real benefit, though one could do it with a hand mixer – if they don’t mind standing there.

Angel Food Cupcakes

Ingredients:

3 egg whites

1/2 tsp cream of tartar

Pinch of salt

1/4 cup + 1 Tbsp sugar

1/4 cup all-purpose flour

1 tsp orange or lemon zest or 1 tsp vanilla extract (your choice)

Directions:

Preheat the oven to 350*.

In a stand mixer beat the egg whites, using the whisk attachment, for 2 minutes on high. Add the cream of tartar and salt and continue beating for another 3 minutes. The whites will have become stiff. Sprinkle in the sugar and flavoring, with the mixer going and continue beating for another 2 minutes.

Turn of the mixer and set the bowl on your workspace. Using a flour sifter, sift the flour over the whites. Fold in gently with a silicone spatula.

Grab a muffin pan, if not non stick spray the pan with cooking spray. (I used non stick) Divide the batter between the cups. You will need a spatula and small spoon to do it.

Bake for 20 minutes or until golden brown. Let cool a bit then pop out and cool on a wire rack.

Makes 12 small cakes.
