Artichoke and Tuna Pasta

This came together very quickly for our dinner tonight – yet another of the “what can I use in the cupboard” dinners.

Artichoke and Tuna Pasta

Ingredients:

8-ounces small pasta shapes (I used mini bowties)

2 6-ounce cans albacore tuna, drained

2 Tbsp extra virgin olive oil

1 tsp diced dried garlic or 4 cloves fresh, minced

1 cup drained and chopped marinated artichokes

1/4 tsp fresh ground black pepper

1 1/2 tsp pasta seasoning blend (I used one by Trader Joe’s, Mrs. Dash would work as well)

1/2 cup fresh grated Parmesan cheese

1/4 cup Italain seasoned dry bread crumbs + more for topping

Directions:

Bring a large pot of water to a boil. Add in pasta and cook for time on package. Meanwhile, in a heavy medium saucepan, heat the oil slowly with the garlic in it. At the time you add in the pasta to the water, add in the artichokes and tuna to the oil, stirring well. Let heat over medium heat for a couple minutes, seasoning with the pepper and pasta spice blend.

Drain the pasta, reserving 1 cup pasta water. Mix the drained pasta with the tuna mix, adding in 1/4 cup reserved water and half the cheese. Add in another 1/4 cup water and the rest of the cheese, mixing well. Stir in the bread crumbs.

If dry add a little more reserved water (though it shouldn’t be).

Serves 3.
