I wasn’t as happy with these bars as I have with past recipes. I found the peanut butter to be strong, although it is a minor ingredient. One to work on maybe.
Cocoa Energy Bars
- 1 cup Medjool dates (8-10, depending on size)
- 1 cup raw walnuts
- ¼ cup cocoa powder
- 1 Tbsp natural peanut butter, chunky or smooth
- ¼ cup shredded coconut (preferably natural)
Pit the dates and cut in half. If using less than fresh dates (or non Medjool ones) soak in hot water for 15 minutes and then drain. If your dates are plump and fresh add them with everything else to your food processor, process until everything is finely chopped.
Line a bread pan (9×5″ loaf pan) with plastic wrap, scrape the mixture into it, fold over the extra wrap and press down evenly, until it is compact.
Refrigerate till chilled for best results, then slice. Keep tightly covered in the refrigerator.
