Strawberry & Coconut Oats

I thought about doing a 5th cookbook review this week….but then realized: It’s spring and I am strawberry obsessed…

Strawberries are one of my favorite berries…yum! Walker (The Toddler) and I have planted so many new strawberry plants this year, somewhere around 60 of them! In the coming years the squirrels and us will be eating well 😉 They joined the already existing ones in the gardens:

A bowl of oats & berries is a wonderful breakfast. Quick, tasty and filling:

Strawberry & Coconut Oats

Ingredients:

Directions:

Add the milk, oats, brown sugar, almond butter, cinnamon and half the berries to a heavy medium saucepan. Bring to a boil over high, lower to medium-low, cook for 5 minutes, stirring often.

Serve topped with remaining berries.

Serves 2.

PS:

If your strawberries are of the “Plastic California” variety (big, large and not so sweet), you may want to sprinkle the berries with a bit of sugar and let sit for 10 to 15 minutes for best taste.

    1. I use the green carton by So Delicious 🙂 You can get it in the dairy section cold, or in quart shelf stable containers – it isn’t high fat either like canned coconut milk is.

  1. Yum! Looks like the perfect breakfast. We have a few little strawberry plants that I apparently planted in a not-sunny-enough area. The few berries that come up get devoured by the squirrels.

  2. Those plants look beautiful! I’m with you…I’m seriously obsessed with strawberries….gotta have them daily. I’ve yet to try peanut butter in my oatmeal, but man that looks and sounds heavenly. On another note…I’m not getting emails about your posts, boo! I just see them on Facebook. Ahhh WordPress!

    1. PB or nut butter in oats takes them to another level. And yeah. that whole no-update thing is so annoying – and happening to so many who use WP 🙁
