Devil’s Food Snack Cake

Devil’s Food Snack Cake

Ingredients:

  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • ½ cup sour cream
  • ½ cup unsweetened coconut milk beverage
  • 1/3 cup sunflower oil
  • 2 tsp cider vinegar

Directions:

Preheat oven to 350°, liberally oil/spray an 8″ baking pan.

Add flour, sugar, cocoa, baking soda and salt into a large mixing bowl, whisk until cocoa is blended.

Add sour cream, coconut milk, oil and vinegar into a medium mixing bowl, whisk smooth.

Pour wet on dry, whisk smooth. Scrape into prepared pan, smooth out.

Bake for 30 to 40 minutes, until a toothpick inserted in the center comes out clean. Let cool before serving.

PS: It will sink in the middle a bit as it cools. That is OK. The center is the best anyways!
