Chocolate-Banana Muffins & A Giveaway

There is something fun about sneaking in a little nutrition into dessert and knowing the kids don’t know. So what did I use? The secret ingredient?

Oat Fiber 

Nu-Naturals Oat Fiber. With an easy hand, you can sneak in extra fiber by simply swapping in a few Tablespoons of it for regular flour. And psssttt….see below for our amazing giveaway!

Chocolate-Banana Muffins

Ingredients:

  • 1½ cups all-purpose flour
  • 1/3 cup brown sugar, packed
  • ¼ cup unsweetened cocoa powder
  • ¼ cup oat fiber
  • 1½tsp baking powder
  • 1 tsp instant espresso powder or instant coffee
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2/3 cup unsweetened coconut milk
  • 2 tsp apple cider vinegar
  • ½ cup  sour cream
  • 2 Tbsp ground flaxseed meal
  • 6 Tbsp water
  • 3 Tbsp coconut oil, melted
  • 1 large ripe banana
  • Raw honey

Directions:

Preheat oven to 400°, liberally spray a non-stick 12 count muffin tin.

In a large mixing bowl whisk together flour, brown sugar, cocoa powder, oat fiber, baking powder, espresso powder, baking soda and salt.

Stir vinegar into milk, let sit till curdled in appearance. Whisk ground flaxseed and and water together, let rest for 5 minutes, whisk until thick. Add flax mixture and sour cream to milk, along with coconut oil. Add to dry mixture, stir until just mixed.

Divide evenly between muffin cups. Slice banana into 12 pieces, push a piece down into the top of each muffin. Drizzle a bit of honey over the top of each slice.

Bake for 15 minutes, or a toothpick in the center comes out clean. Let cool for a few minutes and turn out. Do not let the muffins stay in the pan till cool, removing will become hard, as the honey will set up.

Makes 12 muffins, they freeze well.

  3. I am always reading good things about NuNaturals. I would like to try it. But ordering from Germany is quite expensive, so I am a bit hesitant. Unfortunately it is not so easy to get good Stevia here and as far as I know we don’t have a flavoured one.

  9. Sarah, All of your baked goods make me incredible hungry. I haven’t tried NuNaturals but I’ve tried other brands of stevia products. Sometimes I put a drop or two into sparkling water. I think Cherry Vanilla would be great like that.
