Homemade Mac and Cheese

As part of a project, I am attempting to teach my 17-year-old life skills. As part of this, I am culling recipes that to me stand out as must haves. A few basics that taste great, fill you up, and are affordable – and impress friends in your early 20’s. One can do so much better than a blue box of powdered cheese!

Homemade Mac and Cheese

Ingredients:

  • 3 Tbsp unsalted butter
  • 1 large sweet onion, finely chopped
  • Pinch sea salt
  • 1 Tbsp garlic (about 3 cloves), diced
  • 3 Tbsp all-purpose flour
  • 3 cusp whole milk
  • 1 Tbsp Dijon mustard
  • 1 Tbsp dried parsley
  • ¼ tsp ground black pepper
  • 8 ounces (2 cups) sharp cheddar, grated
  • 16 ounces macaroni

Directions:

Bring a large pot of salted water to boil, cook pasta as directed on box, stirring often. Drain and set aside.

Meanwhile, heat a tall saucepan over medium, melting butter. Saute onion and salt, till tender, 5 to 10 minutes, add in garlic, cook for another minute.

Sprinkle flour on, whisk often, letting cook for 2 to 3 minutes, till turning golden.

Slowly whisk in milk, stirring sauce smooth. Add in Dijon, parsley, and pepper. Let cook, whisking often until bubbling and thickened. Take off heat, stir in cheese till it melts.

Pour over hot pasta, stirring gently to enrobe.

Serves 4 to 8.
