Banana Muffins

Banana Muffins

Ingredients:

  • 4 very ripe bananas
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • ½ cup brown sugar, packed
  • 1 tsp fine sea salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg

Directions:

Preheat oven to 350°, line a 12 count muffin tin with premium liners.

Mash bananas, mix with eggs and vanilla.

In a large mixing bowl, whisk together flour through nutmeg. Add in banana mixture, stir until just mixed.

Spoon batter into the muffin cups.

Bake for 20 to 25 minutes, until they are golden and look baked on top.

Let cool on a cooling rack. Muffins freeze well once cooled.

Makes 12 muffins.
