Pasta, Potatoes and Green Beans

This recipe comes together quickly and is satisfying. I had dinner on in under 30 minutes last night.

Pasta, Potatoes and Green Beans


  • 3 potatoes (3/4 lb) (Yukon Gold, red, white, etc), cubed into bite size pieces
  • 6 ounces fresh or frozen green beans, 3″ lengths
  • 1 lb rigatoni pasta
  • 1 cup prepared pesto


Bring a large pot of water to a boil. Add in potatoes and cook for 10 minutes, add in the green beans and cook for 3 more minutes. Using a slotted spoon or strainer, grab the potatoes and beans, stash in a large heat safe mixing bowl. Add in the pasta to the pot and cook for time on package. Meanwhile in a small heat safe bowl mix the pesto with 1/2 cup of the boiling pasta water, stirring till mixed.

Drain the pasta, toss with the potatoes and beans and then with the sauce. Serve immediately.

Serves 4 to 6.
