Pumpkin Chia Oatmeal

For breakfast this morning:

Pumpkin Chia Oatmeal


  • 2 cups unsweetened almond milk
  • 1 cup old-fashioned oats
  • ½ cup canned pumpkin purée (organic preferably)
  • ¼ cup pure maple syrup
  • ¼ cup raisins (preferably organic)
  • ½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • 2 Tbsp natural style peanut butter or nut butter
  • 2 Tbsp chia seed, ground finely (preferably organic)
  • Brown sugar for topping, if desired


Bring everything but the peanut butter and chia seed to a boil in a heavy medium saucepan. Turn to medium-low and cook for 5 minutes, stirring often. Take off the heat, stir in the butter till melted in and then add the chia, stirring in. Dish up into two bowls and serve.

Serves 2.
