21 Day Fix Mint Chocolate Chip Ice Cream

I started doing Autumn Calabrese’s 21 Day Fix – Essential Package last week. I needed something to push me more in my workout goals.

And don’t get me wrong, it isn’t easy workouts. But I like them, and they go well with my daily steps and Precor Crossramp elliptical workouts. Now then….the big thing for me is I really have been watching what I eat the past 10 days. I might have been working out for 80+ days, but I wasn’t watching the levels of calories and/or crap food going into my mouth as much as I should have been. So I have been playing with more recipes that are 21 Day Fix diet friendly. I adapted a recipe I saw, making it even lighter, but also made a much larger batch, since I am serving the family.

This isn’t a super low-calorie splurge, a serving is still 200 calories. But is a dense, nutrient packed treat*.

Mint Chocolate Chip Ice Cream

Ingredients:

  • 4 medium ripe bananas
  • 1 cup unsweetened coconut milk beverage
  • 3 cups fresh spinach leaves (washed and fully dry)
  • 2 tsp pure vanilla extract
  • ½ tsp pure peppermint extract
  • 1 cup dark chocolate chips

Directions:

Peel and chop bananas, freeze solid on a parchment paper lined baking sheet (4 hours at least).

Add coconut milk and spinach to a food processor, blend until smooth. Add in flavoring extracts, blend.

Add bananas, process until smooth, you will need to stop and scrape a few times.

Add in chocolate chips, pulse until blended in.

Scrape into a freezer safe container, tightly cover, and let freeze until solid (I use a Tovolo Glide-A-Scoop Ice Cream Tub).

Serves 8 portions.

*Note:

This is NOT a sweet treat. If you are used a much sweeter flavor, I highly suggest you add a sweetener, such as honey or maple syrup, starting at about 4 Tablespoons. The flavor is more akin to how green smoothies taste, which if you like, you will love this.

Per portion:

1 Green 1 Yellow 1 Purple

200 calories (approximate) per serving (without any added sweetener).
