One of my favorite cookies has always been a simple sugar cookie – nothing fancy added, just a slightly sweet and tasty cookie, easy to make. (And they freeze well also.)
- 1 1/2 cups white sugar
- 1 cup butter (2 sticks), softened
- 2 eggs
- 1 Tbsp pure vanilla extract
- 3 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
Preheat oven to 350°, line two baking sheets with parchment paper.
Using a stand mixer beat sugar and butter until fluffy. Add in eggs and vanilla, mixing till smooth and blended. Add in flour, baking powder and salt. Beat till a cookie dough forms.
Dish up balls of dough, flatten a tiny bit and put 12 on each sheet. Bake for 10-16 minutes (depends on oven and how thick your cookies are).
Makes about 5 dozen.
