Apple Coffee Cake

As part of our lazy Sunday morning breakfast I made this wonderful vegan coffee cake from 1,000 Vegan Recipes, on page 523. Easy and delicious!

Apple Coffee Cake

Ingredients:

  • 1 good-sized apple, peeled, cored and shredded (I used a Gala)
  • 1 Tbsp lemon juice (fresh or bottled)
  • 1 cup unsweetened almond milk
  • ¼ cup canola oil
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp kosher salt

Directions:

Preheat the oven to 350° and spray an 8×8″ glass baking pan with cooking spray.

In a small mixing bowl toss the apple with the lemon juice. Add the almond milk and oil, stir to combine.

Sift the dry ingredients into a large bowl, add the wet and mix to combine.

Spread into the prepared pan and bake for 1 hour, or until the cake is golden and a toothpick come out clean in the center.

Let the cake sit for a few minutes and then cut into portions – if you can wait, do let it cool for 30 minutes for best cutting results.

Makes 9 squares.
