A no cook pudding that is easy to make but does have a taste curve – if you love lemons you will like it. Otherwise it might be too puckery!
Lemon Cream Pudding
- 12 ounce package silken firm tofu
- ¼ cup fresh lemon juice
- 1 Tbsp grated lemon zest
- ½ cup agave syrup
Add everything to a food processor, process until smooth.
Divide between 4 dishes and chill for a couple of hours.
