Maple Banana Bread

This Maple Banana Bread is egg-free, and unlike most banana bread recipes isn’t heavy on sugar, nor oil. And you won’t miss it at all 😉

Maple Banana Bread

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup pure maple syrup
  • ½ cup plain unsweetened greek yogurt, dairy on non-dairy
  • 1½ tsp Ener-G + 2 Tbsp warm water (can use 1 large egg instead)
  • ½ tsp pure vanilla extract
  • 5 ripe bananas, mashed

Directions:

Preheat oven to 350°. Lightly oil a standard 9×5 bread pan.

Whisk flour, baking powder, and baking soda in a mixing bowl.

Whisk together wet ingredients, pour over dry, and stir just to combine.

Spread in prepared pan. Bake for 55 to 65 minutes, until golden and a toothpick comes out clean in the center.

Let cool for 10 minutes, flip out of pan, let cool before slicing. Once cooled, put in bread bag and use within 2 to 3 days.
